Recipe Post: Homemade Mexican Rice

I think I came up with this on a burrito night a few months ago. We needed Mexican rice and I forgot to buy any box mix. So came up with this on the fly and, amazingly, it worked. So if you ever need an easy Mexican side dish, I highly recommend.

Start with 2-3 cups of prepared rice. Put it in a non-stick pan over medium-low heat.

Next add about a tablespoon each of cumin and chili powder.

Stir it around and get the rice fairly saturated.

Next add 1/4 cup of your favorite prepared salsa.

Stir it around and saturate again.

Then let the rice warm through and continue stirring. You want it warm, but we’re not making fried rice here. You just want to help the rice absorb the salsa.

Then when most of the moisture is gone, turn off the heat, and voila! You’re done!

The best part is, you can adjust the heat of the dish according to the kind of salsa you use. Plus, since you’re using your favorite salsa, you already know you’ll like it ;)

  6. I'm a fan of anything with cumin! I do my Spanish meatballs and rice kind of similar but I use cumin, paprika and V8 (I can't stand V8 normally but with the cumin and paprika, it totally changes the flavor)...so good!
